Remove tip from the wing and discard.
Separate the wing at the joint with sharp kitchen scissors or a bread knife (my personal preference).
Place wings in a stockpot of salted boiling water and boil for 10 minutes or until fat has rendered and meat is cooked through.
Remove wings from pot and place on a cookie sheet; pat dry with paper towels and allow to cool for about an hour (very important step in getting crispy wings without frying!).
Preheat oven to 400 degrees.
While oven preheats, melt the butter and combine with hot sauce and honey.
Place wings in oven and bake for 15-20 minutes, or until fat has rendered to your preference and skin is crispy. This is the tricky part as ovens are so different! Keep checking those wings until they look good to you.
Remove from oven and toss in butter/honey/hot sauce mixture until fully coated.
