Perfect Mexican Pork Carnitas

I admit it – I could eat Mexican food every day! I crave these flavors more than any other type of food! The problem is when I eat flour or corn, my fingers swell up like little sausages! Occasionally, I don’t let this reaction stop me – for me, it isn’t dangerous, just uncomfortable until the corn or flour product has left my system. But for the most part, I’ve found great substitutions for tortillas, taco shells, and chips that keep my fingers, and my family, happy!

These Mexican pork carnitas are so packed with flavor, you won’t miss the corn or flour shell!

Another great thing about this particular recipe is that it’s soooo easy for a busy family – the oven does all of the hard work! The pork butt meat can also be used for various other dishes, as well as frozen for later use. When shopping for this cut of meat, don’t get confused if your grocer doesn’t have a butt. A pork shoulder is the same thing! I don’t understand how a butt and shoulder are the same, but in this case, they are!

Ok, here are the deets…

PERFECT MEXICAN PORK CARNITAS

Ingredients

  • One medium pork butt (or shoulder)
  • Salt & Pepper
  • Cooking fat – bacon fat, ghee, avocado oil, or coconut oil
  • Sheet pan
  • Brown paper bag

Finishings for the tacos –

  • Large lettuce leaves, like Bibb lettuce
  • Cilantro
  • Full fat or lactose free sour cream
  • Sugar free salsa – your favorite brand or recipe (OPTIONAL)

Directions

  1. Preheat oven to 275 degrees F.
  2. On the cook-top, heat a dutch oven to medium high heat, and add 1 tbs of preferred cooking fat.
  3. Pat butt with a paper towel to remove excess moisture and generously salt and pepper all sides.
  4. Brown butt, turning occasionally to cover all sides, in dutch oven on cook-top until a crust has formed.
  5. Place butt in paper bag and fold open side under several times to “seal.” Place on sheet pan and cook in the oven at 275 degrees F for 5-6 hours, depending on the size of your meat.
  6. When cooked, meat should be tender and very juicy but shred easily with a fork!
  7. Place shredded meat in lettuce leaf, top with sour cream, salsa and cilantro and ENJOY!

These Mexican pork carnitas also rocks with pickled or grilled jalapenos!
