Coconut Sugar Marshmallows

These marshmallows are loaded with caramel flavor, thanks to the coconut sugar used as the sweetener! A good dose of grass fed beef gelatin packs in the nutrients, making this snack virtually guilt free! These marshmallows are good enough to eat on their own, but make the perfect accompaniment to hot chocolate, s’mores, fruit and a bit of yogurt…

You know what these fellas don’t have? Hormone disrupting, blood sugar wrecking high fructose corn syrup. And you won’t miss it a bit!

Here’s what you’ll need:

1 cup filtered water

3 tbs grass fed beef gelatin (I like Great Lakes)

1 cup organic coconut sugar

1/4 tsp salt

1/4 cup arrowroot powder

Here’s what you’ll do:

In a stand mixer with whisk attachment, add 1/2 cup of water and the gelatin. Allow to bloom, while moving on to next step.

Using a medium pot, affix a candy thermometer to the side of the pot. Place on medium to medium high heat.

Add remaining water, coconut sugar and salt. Mix until combined and then stir continuously until the consistency of the mixture is a soft taffy and the candy thermometer reads “soft ball,” about 4-6 minutes.

Turn mixer on medium and slowly add sugar mixture to incorporate with gelatin. Turn stand mixer up to medium high and let mix until sugar mixture turns a golden creamy color and becomes fluffy, about 8-10 minutes.

While marshmallows are mixing, grease a 9×9 glass or metal cake pan and line with parchment paper, leaving ends to hang over pan. Flour lightly with arrowroot powder.

Turn off mixer and – working quickly – spread the marshmallow mixture in the pan as evenly as possible Don’t worry, it won’t be perfect! Sprinkle a bit more arrowroot powder over top.

Allow to set in the fridge for about 6 hours or overnight.

Gently lift parchment paper from pan and invert marshmallows over a cutting board. Cut marshmallows to desired size and store in a glass or plastic container on the counter for up to 2 weeks or in the fridge up to 1 month!
