Apple Bacon Cheddar Protein Muffins

My family is always looking for a quick snack or breakfast option!  No matter how well we plan, it always seems we are racing out the door or stopping to grab the quickest lunch or snack in history in between meetings. Enter the high-protein muffin with THE BEST Fall flavors…


This muffin not only combines the magic of apples, bacon, and cheddar cheese (if you haven’t had this flavor combo yet, have you really lived?!) with whey protein powder to give each muffin a whopping 10 grams of protein!  These flavors are nestled into an airy Einkorn flour base that’s easy to digest and consumable for most with gluten issues (sorry, my Celiac friends)..


You can even add a bonus ingredient to up the nutrition value with trace minerals and a good dose of potassium – brewers yeast!  This adds a delicious yeasty, nutty flavor that’s quite addicting!  Not a fan of this flavor? Just leave it out!

Here’s what you’ll need: 

12 muffin tin

muffin liners

non-stick spray (I used coconut oil spray)

1 1/2 c Einkorn flour

2 scoops whey protein powder

1 1/2 tsp baking powder

1/4 tsp salt

3 tbs raw cane or coconut sugar

1 tbs butter, softened

2 large eggs

1 cup unsweetened apple sauce

1/2 cup whole milk

6 slices cooked and crispy bacon, crumbled

1 large apple of choice, peeled, cored, and diced

1/2 cup cheddar cheese, shredded

1 tbs apple cider vinegar

Here’s what you’ll do:

  • Preheat oven to 425 degrees
  • Lightly spray muffin tin and then line with muffin liner.
  • In a bowl, combine flour, protein powder, salt, sugar, baking powder. Set aside.
  • In a stand mixer, combine butter and eggs, whisk until combined. Add applesauce and mix well. 
  • While the mixer is on medium-low (2-3), alternate flour mixture with milk. Mix until combined. Add brewers yeast if using and mix. 
  • Fold in crumbled bacon, diced apples and cheddar cheese until fully combined. 
  • Pour into muffin tins, being sure all tins have the same amount. Should make about 10 muffins. 
  • Cook in oven at 425 degrees for 10 minutes, then reduce heat to 350 degrees and continue cooking for about 15 minutes or until golden brown and toothpick inserted comes out clean.
